My Jack

My nephew Jack will be three soon.... I can't believe it! He is a November baby like me so we have a special bond ;-) I have so missed him (and Lindsay my sister) being just down the road from me... Instead of just popping in on my way somewhere it takes planning now.... One of these days I'm going to go snatch him up so he can spend a couple days with his aunt Tatie and uncle Tim.

Labor Day Fun

On Labor Day the Mizell's and Hebert's all got together and made pizzas. Tim had to work most of the day so Nick and I got to go have lunch with him and one of the other officers before heading over to make pizzas with the family...

Cajun Chicken Pasta

I made this the other night and it was delicious! I will definitely be making it again! The link to the blog I got it off of is below... I love her blog and have found many great recipes on it. Aunt Carrie brought this one to my attention though and I'm glad she did!

Here are the Ingredients

* 3 whole Boneless, Skinless Chicken Breasts, Cut Into Cubes
* 3 teaspoons Cajun Spice Mix, More To Taste
* 1 pound Fettuccine
* 2 Tablespoons Olive Oil
* 2 Tablespoons Butter
* 1 whole Green Bell Pepper, Seeded And Sliced
* 1 whole Red Bell Pepper, Seeded And Sliced
* ½ whole Large Red Onion, Sliced
* 3 cloves Garlic, Minced
* 4 whole Roma Tomatoes, Diced
* 2 cups Low Sodium Chicken Broth
* ½ cups White Wine
* 1 cup Heavy Cream
* Cayenne Pepper To Taste
* Freshly Ground Black Pepper, To Taste
* Salt To Taste
* Chopped Fresh Parsley, To Taste

Preparation Instructions

Cook pasta according to package directions. Drain when pasta is still al dente; do not overcook!

Sprinkle 1 1/2 teaspoons Cajun spice over chicken pieces. Toss around to coat. Heat 1 tablespoon oil and 1 tablespoon butter in a heavy skillet over high heat. Add half the chicken in a single layer; do not stir. Allow chicken to brown on one side, about 1 minute. Flip to the other side and cook an additional minute. Remove with a slotted spoon and place on a clean plate.

Repeat with remaining chicken. Remove chicken, leaving pan on high heat.

Add remaining olive oil and butter. When heated, add peppers, onions, and garlic. Sprinkle on remaining Cajun spice, and add salt if needed. Cook over very high heat for 1 minute, stirring gently and trying to get the vegetables as dark/black as possible. Add tomatoes and cook for an additional 30 seconds. Remove all vegetables from the pan.

With the pan over high heat, pour in the wine and chicken broth. Cook on high for 3 to 5 minutes, scraping the bottom of the pan to deglaze. Reduce heat to medium-low and pour in cream, stirring/whisking constantly. Cook sauce over medium-low heat for a few minutes, until cream starts to thicken the mixture. Taste and add freshly ground black pepper, cayenne pepper, and/or salt to taste. Sauce should be spicy!

Finally, add chicken and vegetables to sauce, making sure to include all the juices that have drained onto the plate. Stir and cook for 1 to 2 minutes, until mixture is bubbly and hot. Add drained fettuccine and toss to combine.

Top with chopped fresh parsley and chow down!

Checking in...

It's been a week since I posted last so I figured I'd check in.

Nothing too exciting has been going on lately so this is just going to be me rambling.

Tim is enjoying his new job and learning the new department quickly! Even though I worry about him when he is out on patrol I am happy that he gets to do what he loves and has a passion for. (Not many people get to do that)

I was sick Tuesday and stayed in bed most of the day... Tim got home around 1 in the afternoon and took care of me. Then since he was working from 12am to 8am he asked my sister Victoria to come stay the night with me. Thanks Sis! You're the best!

Wednesday mornings I've been going to a ladies bible study... We are doing a study called: Anointed, Transformed, Redeemed. A study of David. by Kay Arthur, Beth Moore and Priscilla Shirer. It's a DVD and work book set. I've really been enjoying it!
And little Salli (the Toddler I watch) is being good and playing with the kids upstairs so I've been able to participate 100% ;-)

We are approaching 3 months of marriage!! Haha, I know three little months you say?... but I don't care, (or as buddy the Elf would say "I'm in love, I'm in love and I don't care who knows it"! Sorry I had to!)
I'm still excited and I think I will be for a long time.
I can't imagine Life without my husband! And with Gods help and protection I pray I never have too!

Longing to sew...

It has been almost 3 months since I have done any sewing.... and I miss it!! Badly!
I was happy for the break right after the wedding. There were so many bridesmaid dresses to sew up and a vest for my nephew!

But now I'm ready for the creativity to start flowing again... Isn't this pattern beautiful... I wanna make one like the white one with the blue sash! (Now I just need to justify adding another costume to my collection) I'll let ya know how it goes! ;-)

I've almost saved up for the sewing machine that I am buying from my Grandma.... Nicer machine than I could have expected to get as "MY" first one.
Then I will pick up the sewing desk my Mom is holding for me... it was my other grandma's (who is with the Lord!) It will be special to have... I miss her!

Now I just gotta squeeze it into our tiny home! ;-) Wish me luck!

Hopefully not too long I can start posting projects I come up with. We'll see!

Love & Respect

What powerful words....

For a wedding gift we received Love & Respect on CD (Thanks Chris & Steph)


The last couple days I have been listening to them while the baby is asleep or while we are playing on the floor. (she likes them too!) We don't have a cd player at home yet so it's either here or in the car I get to listen to them. I think I'm going to buy the book so Tim and I can go through it together...

It has been very interesting and informative to me.... Love & Respect is about how we treat our spouses. Woman most want to be and feel loved, while men most want to feel respected. (doesn't mean they don't want to be loved, just that respect is more important to them)

The crazy cycle:
That's what the author calls it when spouses start to argue.... for whatever reason the wife feels unloved, because she feels unloved her natural response is disrespect her husband which then leads him to be unloving and the whole crazy thing starts over again! Wow!

I was talking to Tim about it the other night, telling him what I had learned... He said he could totally see how that yucky cycle could get started.
We then started talking about how we need to recognize when we start treating each other that way and to step away from the "crazy cycle"

We girls see and hear things through pink colored glasses and hearing aids while guys see and hear through blue! Of course we are going to hurt and miss understand each other! And most of the time with out even knowing it... but the key is to be sensitive enough to know when something is not right.

Well, there's what I think of it so far, and I'm only on the second cd! :-)
Oh , and I realize most of you girls/guys who are reading this are not married yet, but that's okay... Start practicing now.... Girls respect your Dad's!
Boy's love your Mom's... Your future spouse will thank you! ;-)
